Preparation steps
Coffee funnel, Filter paper, Pouring kettle, Electronic scale, Coffee container
Time: 2 – 3 minutes (for 15g – 20g)
Ratio: 1/10 – 1/17
Water temperature: 92-96 °C
Grind level: between fine and medium (Medium or Medium-Fine)

Implementation steps
Step 1:
Place the filter paper in the coffee funnel, and wash it with hot water to remove impurities and any strange flavors from the filter paper.
Step 2:
Boil water at a temperature of 92-96°C for optimal coffee extraction. With a traditional kettle, we can boil it, then pour it into the pouring kettle and let it cool for 30 seconds to 1 minute
Step 3:
Put the coffee on top of the filter and make a small hole on top
Step 4:
Place the entire brewing unit on the digital scale and reset to 0 grams. The standard ratio is 1:15-17; however to start, we use a 1:16 ratio, which is 15 grams of coffee to 250 grams of water.
Step 5
Start the timer, gently and very slowly pour 30-40 grams of water (ratio 1 gram of coffee, 2-2.5 times water) starting from the center, then spiraling from the inside out. Let the coffee brew for 30-40 seconds.
Step 6
When the coffee has finished blooming, it will sink back down slightly; this is when we will add more water. Add more water or pour another 110 grams of water, for a total of 160 grams of water, within 1 minute.
When the timer shows 1’15s, “Pour” the remaining amount, until it shows 250g of water, finishing the pour time around 2 minutes.
The ideal extraction ratio should finish between 2 minutes and 2 minutes 30.

Note
During the tasting process, depending on your taste, you can change the ratio as follows:
Reducing the ratio from 1:16 to 1:13-15 will increase coffee extraction, and make it less bland.
Changing the grind size to a coarser size will help extract less coffee.
The higher the water temperature, the stronger the coffee will be extracted. However, the ideal is still from 92-96 degrees.
Change the brewing time from 30s to 45s.
