Step 1: Place the filter paper in the Chemex, pour in some boiling water, wet the filter, and heat the pot. After about a minute, you can pour the water out of the pot.
Step 2: Add the freshly ground coffee powder, and shake the Chemex gently to balance the coffee surface. This will even out the coffee; when the coffee extraction is down, it will also be absorbed more evenly.
Step 3: Pour slowly and evenly in a spiral from the center outwards, and finish when it is necessary to display 40g – 60g of boiling water (the amount of water is 2 to 3 times the amount of coffee), and must soak all the coffee powder.
The steeping time is from 30 to 45 seconds, depending on the type of coffee and the purpose of brewing. The purpose of the first pour is to let the coffee powder bloom (Bloom) and release CO2.
Step 4: Pour Over
After 30 – 45s of blooming, we will add 260g – 280g of water for 2 minutes and 30 and finish dripping for about 4 minutes

Do not pour water directly onto the filter paper, as it will make the water flow straight down instead of permeating the coffee powder
